Rhubarb Cornmeal Lime Muffins

It's spring, there's rhubarb in the garden and not much else.  The heat this week is making me crave all kinds of summer fresh food but Mother Nature isn't quite ready to provide for us.  Don, Jos and I all love rhubarb.  We recently remodelled the back yard, moving gardens and sodding over the shady areas that never really grew much.  The one holdout in this yard of green grass?  Yep, the rhubarb plant.  Left untouched to keep providing us with yummy snacks all spring long.

Persian Chickpea Rhubarb Curry

How utterly Canadian of me to talk about the weather, but it's hard to think of little else these days.  Although the calendar is creeping toward the end of May, the weather feels nothing like summer.   Josilin played soccer in the pouring rain and temperatures close to 3 degrees Celsius last week.  Prior to heading out she packed herself a little bag of essentials.  Two sweaters, a coat, a head warmer and her favourite blanket.

I've been single parenting for two weeks now.  Don's out of town on business and so it's just me and the two darlings.  Whenever this happens, I am forever in awe of the real single moms out there.  It is a huge job they take on every day.  I have been so exhausted with him absent and my desire to step into the kitchen wanes.  We will be thrilled to see Don return this weekend, but in the meantime I still want to eat good, wholesome food. Finding the time to make such a meal required a little more creativity than usual.

Spiced Rhubarb Iced Tea

Watching the Food Network, it is not hard to have food envy of all the Food Trucks throughout North America.  I long for the days when we might see this type of eating establishments on wheels come through Southern Ontario.  In the meantime, I have stumbled upon a few places that are providing fun one-day-only type lunches. There is great entertainment in not knowing what you might be eating and also racing to get there before it's sold out.
