Gluten Free Granola Cookie

We often joke that Luke was born with a ball and glove in his hands.  You name a sport and very likely Luke either plays it, has played it or dreams of playing it someday.  He’s been asking to try golf for sometime now.  He loves watching the Masters and British Open on tv and will pretend he is golfing around the house.  The tricky thing about golf is that unless you play already, it’s a pretty big commitment to give a kid a try.  Neither Don or I play, so it wasn’t like we could just bring him along sometime to play with us.  I'm not aware of any course that let's you drop your kids off to learn the sport either.

Being the lucky boy that he is, all that changed this week when grandma invited him golfing.  He absolutely loved it (big surprise) and he’s already asking when he can go again.  We made these cookies as a “thank you” for grandma, ensuring they met her gluten free requirements.  You wouldn’t know they are GF and I’d happily serve them to anyone craving a wholesome nourishing cookie. 

Gluten Free Granola Cookie

3/4 cup butter (1 1/2 sticks)
1 cup sugar
1 large egg
2 tablespoons molasses
1 teaspoon vanilla extract
1/3 cup coconut flour
1 1/4 teaspoons cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
2 cups GF granola (i used this one)
1 cup hemp seeds
1 cup dried cherries

Prehat oven to 325degrees.
Mix together butter and sugar until fluffy.  Add egg, molasses and vanilla and continue to beat about 2-4min until incorporated.  Add flour, cinnamon, sat and baking soda and mix together.  Add granola, hemp seeds and dried cherries and mix.  Form into small balls and flatten into cookie shape.  They spread very little when baking.  Bake 10-12min and remove from oven.  Leave to cool on sheet for 30min as they will be very crumbly when warm.  Enjoy!

  1. Oh, I LOVE that you added hemp seeds and dried cherries instead of raisins! What a great way to add delicious (and nutritious) flavor to these yummy oatmeal cookies! What an EXCELLENT idea!!
